Which mirrorless camera offers the best video performance under $800?

Ive been shooting stills for a decade so I know my way around a menu but man switching to video is a total headache right now. My logic was that $800 would be plenty for a solid mirrorless body for my Italy trip next month but everything has a massive catch. I was looking at the ZV-E10 for the AF but the rolling shutter is just straight up jello and then I checked out the Lumix G95 but that crop in 4K is insane. I just need something reliable that wont overheat or hunt for focus every five seconds. Is there actually a decent hybrid in this price range or am I just stuck with gear that feels five years old? My budget is firm at 800 because I already bought my lenses...

You seriously need to check out the Canon EOS R10 Mirrorless Camera Body! It is absolutely fantastic for the price. I love it because the autofocus is lightyears ahead of that older tech you mentioned. It tracks eyes so well you basically just point and shoot... no more focus hunting mid-shot!! Since youre worried about that jello effect and cropping, the R10 is such a solid hybrid choice. It feels modern and snappy. Another killer option if you can find a sale is the Sony ZV-E10 II Mirrorless Camera Body. They finally addressed the rolling shutter issues from the original version and it is amazing for video now. Both of these will be light enough for your Italy trip too. Youre gonna get some incredible shots!!
