I'm going to buy the Nikon Z6 III and I'm looking for recommendations on the best memory card to use with it for both photos and video. The camera has two card slots that support CFexpress Type B and UHS-II SD cards. I shoot a mix of raw stills and 4K 60p video.

For SD card slot, you can get UHS-II V90 SD cards, such as SanDisk Extreme Pro UHS-II V90 SDXC or Lexar Professional 2000x UHS-II V90 SDXC.

Get the Lexar 1TB Professional Silver SE CFexpress Type B Memory Card, it is really cheaper than most CFexpress Type-b cards.

For the Z6III, choose a CFexpress B card with a sustained write speed above your maximum video bitrate. Most midrange cards handle 800MB/s, exceeding the camera's needs. For video size, calculate based on desired shooting time and quality. The camera shoots 6K60P for about 1h45m on a full battery.
For stills, aim for a card with around 800 MB/s write speed to achieve an unlimited buffer at 20FPS in various RAW modes. HE* mode offers lossless compression without quality loss. While 1300-1500 MB/s cards guarantee unlimited buffer, they may be overkill for the Z6III.
The SD slot (UHS-II) is more limiting, with most cards having a 90MB/s minimum sustained write speed. Use it for manual backups to avoid slowing down the camera.
